Peach Vinaigrette
How to make Peach Vinaigrette
Prep Time: 10 minutes | Makes: 1 cup
Ingredients
- 1 ripe peach, stone removed
- 2 tbsp Bramwells honey
- 1 tsp Colway seeded mustard
- 2 tbsp Pure Vita white wine vinegar
- ¼ cup Remano olive oil
- Stonemill sea salt and cracked pepper
- 1 tbsp chopped chives
Method
- Peel the peach and remove stone. Add to the blender or food processor with the honey and mustard. Blend until smooth and creamy. Add the vinegar and blend for 30 seconds until fully incorporated.
- With the blender running on low, slowly drizzle in the olive oil. This will help emulsify the vinaigrette, creating a smooth and velvety texture. Season to taste with salt and pepper.
- Stir in chives. Use immediately as a dressing or transfer to a screw-top jar, which can be stored in the fridge for up to one week.
Tip: Serve over spinach leaves, burrata and peanuts with extra peaches.
