Sweet Chilli Lime Salmon Salad
How to make Sweet Chilli Lime Salmon Salad

Ingredients
- 2 x 95g cans Ocean Rise sweet chilli salmon, drained
- 1 head of fresh cos lettuce or baby gem lettuce, chopped
- 1 cup cucumber, diced
- 1 cup bellino tomatoes, halved
- 2 tbsp red onion, finely minced
- ½ bunch fresh coriander, leaves and stems finely chopped (separated)
- Juice of 1 lime
- ¼ cup spring onion, sliced
- 2 tbsp The Olive Tree olive oil
- Stonemill sea salt, to taste
- Stonemill black pepper, to taste
Method
- In a large salad bowl, combine the chopped lettuce, diced cucumber, halved bellino tomatoes and spring onion.
- Add the drained salmon, breaking it into large chunks.
- Add red onion and chopped coriander stems.
- In a small bowl, whisk together lime juice, olive oil, salt and pepper.
- Pour the dressing over the salmon and mix to combine.
- Toss salmon with the salad then season with salt and pepper, to taste.
- Garnish with coriander leaves and serve.
