Thai-Style Sweet Chilli Dipping Sauce
How to make Thai-Style Sweet Chilli Dipping Sauce

Ingredients
- ½ cup grated palm sugar
- ½ cup water
- 2 tbsp Pure Vita white vinegar
- 1-2 red and green chillies, finely minced
- 2 tsp Asia Specialities fish sauce
- 1 tbsp fresh lime juice
- 2 coriander roots, finely chopped
- 2 tbsp chopped coriander leaves
- 1 spring onion, finely chopped
- 1 pack Urban Eats spring rolls, to serve
Method
- Combine palm sugar, water and vinegar in a small saucepan. Bring to the boil over medium-high heat. Turn heat down to medium and cook for 10-15 minutes until slightly thickened and syrupy. Add chillies in the last 5 minutes.
- Remove from heat and add fish sauce, lime juice, coriander roots and spring onions.
- Cook spring rolls according to packet directions. Serve sweet chilli dipping sauce with spring rolls.
