How to Make Sesame Chilli Crisp

Method

  1. Place the oil into a small saucepan and bring to a medium heat. Add the onion and cook slowly for 10 minutes or until lightly golden brown and crispy. Using a fine sieve, remove the crispy onion and set aside. Add the garlic to the oil and cook for 1 to 2 minutes or until lightly browned. Remove with the sieve and set aside. Add the fresh chilli and cook for 3 minutes or until a little crispy. Rremove with the sieve and set aside.
  2. Take the oil off the heat and leave to cool slighty for 5 minutes. Add the reserved crispy onion, garlic and chilli, along with the sesame seeds, chilli flakes, soy sauce and caster sugar. Mix together and transfer to a jar. Serve at room temperature.

Tip: It’s important that the onion, garlic and fresh chilli are finely sliced to allow them to crisp up nicely. Use a mandolin for super thin onion slices.
