How to Make Sicilian-style Roasted Cauliflower


  1. Preaheat oven to 180°C (or 160°C fan forced ovens). Wash cauliflower and pat dry. Break cauliflower into florets, place onto a large baking sheet and drizzle with 60ml of olive oil. Season well with salt and papper. Toss to coat.
  2. Bake for 35 minutes or until nicely coloured.
  3. To make the salsa, mix the sultanas, toasted pine nuts, lemon juice and zest, olives and parsley together with the remaining oil. Season with salt and pepper.
  4. Remove roasted cauliflower from oven and place in serving bowl. Pour salsa over the cauliflower. Toss gently and serve garnished with lemon wegdes.

Tip: The dressed cauliflower works beautifully with chargrilled pork scotch fillet steaks.

Optional: You can substitute the sultanas with currants.
