How to Make Watermelon, Mint and Fetta Salad


  1. Cut the skin off the watermelon and cut into large fingers. Place onto a serving platter.
  2. Drain the flavoured oil from the fetta and reserve 3 teapoons for the dressing. Discard the peppercorns.
  3. Dot the feta on top of the watermelon and drizzle with the vinegar and reserved oil.
  4. Scatter over the mint leaves and top with some freshly ground black pepper.

Tip: Assemble just before serving, for maximum freshness.

Optional: You can substitute marinated fetta for Greek- or Persian-style fetta.
