Chilli Lime Peach and Tofu Skewers

How to make Chilli Lime Peach and Tofu Skewers

Prep Time: 15 minutes        |        Cook Time: 8 – 10 minutes        |        Serves: 4

Ingredients

  • 500g Earth Grown tofu
  • 2 peaches, pitted
  • 2 tsp Stonemill ground chilli
  • 2 tsp Stonemill garlic powder
  • 2 tsp grated lime zest
  • 1 tsp Stonemill Himalayan salt
  • 2 tbsp Asia Specialities sweet chilli sauce
  • 1 tbsp Asia Specialities soy sauce
  • 1 red capsicum
  • 1 small red onion, peeled
  • 1 tbsp olive oil
  • 1 lime cut into wedges, to serve

Method

  • Cut the tofu and peaches into 2.5cm cubes and set aside.
  • Combine ground chilli, garlic powder, lime zest and salt in a small bowl and set aside.
  • Combine sweet chilli sauce and soy sauce in another bowl and set aside.
  • Remove pith and seeds from capsicum. Cut capsicum and onion into 2.5cm pieces.
  • Thread tofu, peaches, onion and capsicum onto wooden or metal skewers and brush with olive oil. Sprinkle with the chilli powder mixture.
  • Preheat BBQ or chargrill. Cook the skewers over medium heat for 8-10 minutes, turning occasionally until lightly charred.
  • Brush with the sweet chilli sauce mixture and serve with lime wedges.
