Sweet and Spicy Salmon Skewers
How to make Sweet and Spicy Salmon Skewers

Ingredients
For sauce:
- 2 tbsp Asia Green Garden fish sauce
- 3 tsp Stonemill minced garlic
- 1 tbsp Stonemill dried chilli flakes, ground
- ½ cup Pure Vita vegetable oil
- ½ cup White Mill caster sugar
- ¼ cup of water
- 1½ tbsp White Mill cornflour
- 3 tbsp water
For skewers:
- ½ tsp Stonemill sesame seeds
- 4 Ocean Royal frozen salmon fillets, defrosted
- 4 wooden skewer sticks
- 1 tbsp Pure Vita vegetable oil
- Lemon wedges, to serve
- Sprigs of fresh coriander, to serve
Method
- For the sauce, add all ingredients except the corn flour and 3 tablespoons of water to a pan and bring to a boil. Simmer for approximately 3-4 minutes until the sugar has dissolved.
- Make a paste with the corn flour and water. Add the paste to the sauce and whisk to thicken slightly. Remove from heat and set aside.
- Lightly toast the sesame seeds in a dry frypan over medium heat, moving around until lightly golden. Set aside.
- For the salmon skewers, carefully remove salmon skin and cut salmon into 3cm cubes. Place on skewers.
- Heat oil in a non-stick pan over medium heat and cook for 2-3 minutes on each side until slightly golden on edges.
- Once cooked, serve skewers on a plate, pour over sauce and garnish with sesame seeds, lemon and coriander sprigs.
