Honey Pork and Nectarine Skewers

How to make Honey Pork and Nectarine Skewers

Prep Time: 15 minutes        |        Cook Time: 10 – 12 minutes        |        Serves: 4

Ingredients

  • 1 tbsp The Olive Tree extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 800g Ironbark Pork pork chops
  • 2 nectarines
  • 2 tbsp Bramwells honey
  • ½ bunch fresh chives, chopped

Method

  1. Add olive oil, lemon juice, salt and pepper to a bowl and mix until combined and the oil is emulsified.
  2. Cut the pork into 3cm cubes and add it to the bowl. Toss to completely coat the pork pieces.
  3. Halve the nectarines, remove the stones and slice into wedges. Thread pork and nectarine wedges onto 8 metal or wooden skewers.
  4. Preheat BBQ or chargrill. Cook for 10-12 minutes, turning occasionally or until the pork is cooked.
  5. Brush the skewers with honey during the last minute of cooking.
  6. Place skewers onto serving plate, sprinkle with chopped chives and serve immediately.
