Mexican Chicken Parcels
How to make Mexican Chicken Parcels
Prep Time: 10 minutes | Cook Time: 20 minutes | Serves: 8
Ingredients
- ⅓ cup The Olive Tree olive oil
- 1 onion, sliced
- 2 cloves garlic, crushed
- 2 red capsicum, cut into strips
- 1 green capsicum, cut into strips
- Stonemill sea salt and cracked pepper
- 3 tbsp El Tora taco seasoning
- 250g cooked white rice
- 420g El Tora black beans, drained
- 2 large free range chicken breasts, sliced lengthways into quarters
- 1 avocado, peeled and sliced
- 2 limes, halved
- ½ cup Farmdale sour cream, to serve
Method
- Heat half the oil in a pan over the fire or the stovetop on medium-high heat . Add onions, garlic and cook for a minute or so. Add red and green capsicum strips and cook for 1 minute until soft. Season with salt and pepper and 2 tablespoons of taco seasoning. Stir in rice and black beans. Allow to cool if packing up for transportation.
- Heat remaining oil in a fireproof pan, over the fire or the stovetop on medium-high heat. Toss chicken strips in remaining tablespoon of taco seasoning. Sear chicken strips, until golden, for 2-3 minutes each side.
- Tear off 16 large pieces of foil. Lay out 2 pieces in a criss-cross fashion. Line each foil case with some baking paper. Repeat with remaining foil/baking paper pieces.
- Divide the rice mixture in between each foil case. Top with chicken strips and 2 tablespoons of water into each foil parcel. Wrap up, securing one side first then the opposite side, so you have a parcel.
- Set the chicken parcels into the coals over a grill rack to cook for 10-15 minutes, until the chicken is cooked through and rice is hot.
- Remove from fire. Use gloves as the parcel will be steaming hot.
- Place onto a plate and allow each camper to add avocado, sour cream and a lime half, to squeeze over each parcel.
Tips: Prepare rice and vegetable components at home for easy transportation. Or take all the ingredients to prepare at the campfire.
Camp Cooking - Pre-planning your cooking site
- Get organised before you start. Set up a table with all cooking utensils, chopping board and essentials like salt, oils, tongs, foil, grill and camping pots.
- Make sure you have enough wood. It is always best to bring your own.
- Clear an area and use rocks to build a fire pit. This will help with wind protection.
- Start a small fire with kindling then add the bigger wood. Have a designated spot next to your fire for coals and a stainless steel mesh grill.
- Start your fire an hour before cooking, so you have hot coals to drag to the side and cook over.
- Use good wood! Dry hardwood is the best.
- Grab some bbq coals and firelighters to use, as these last longer and give a more even heat than wood.
- A good fire takes about 40-50 minutes to be ready for cooking. Cook over a grill, as this will ensure even, controlled cooking and heat. The coals are ready to cook when they have turned grey.
