How to make Yum Mamuang (Thai Mango Salad)

Ingredients
- 1 green mango julienned
- 2 carrots, julienned
- 2 cucumbers, julienned
- ½ cup coriander leaves, plus extra to garnish
- ½ cup basil leaves, plus extra to garnish
- ½ cup mint leaves, plus extra to garnish
- ¼ cup toasted peanuts, crushed lightly
Sauce:
- 2 red chillies, minced
- ⅓ cup brown sugar
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 3 tbsp lime juice
- 1 spring onion, finely chopped
- 1 tbsp crushed roasted peanuts, plus extra to serve
Method
- To make the sauce, combine all ingredients together in a small mixing bowl. Taste and adjust seasoning if necessary. It should taste sweet, salty and hot at the same time.
- Using a julienne peeler, shave the green mango, carrot and cucumber into a large bowl. Add herbs and peanuts and toss to combine. Pour in sauce and toss to coat. Arrange on a platter and top with extra peanuts and herbs.
- Serve as a refreshing side salad or add poached chicken or crispy pork to make it a meal.
Tips: You can buy green mangoes in independent fruit stores. Use a peeler with a julienne blade, to make the prep time easier.
