Yum Mamuang (Thai Mango Salad)

How to make Yum Mamuang (Thai Mango Salad)

Prep Time: 20 minutes        |        Serves: 4

Ingredients

  • 1 green mango julienned
  • 2 carrots, julienned
  • 2 cucumbers, julienned
  • ½ cup coriander leaves, plus extra to garnish
  • ½ cup basil leaves, plus extra to garnish
  • ½ cup mint leaves, plus extra to garnish
  • ¼ cup toasted peanuts, crushed lightly

Sauce:

  • 2 red chillies, minced
  • ⅓ cup brown sugar
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 3 tbsp lime juice
  • 1 spring onion, finely chopped
  • 1 tbsp crushed roasted peanuts, plus extra to serve

Method

  1. To make the sauce, combine all ingredients together in a small mixing bowl. Taste and adjust seasoning if necessary. It should taste sweet, salty and hot at the same time.
  2. Using a julienne peeler, shave the green mango, carrot and cucumber into a large bowl. Add herbs and peanuts and toss to combine. Pour in sauce and toss to coat. Arrange on a platter and top with extra peanuts and herbs.
  3. Serve as a refreshing side salad or add poached chicken or crispy pork to make it a meal.

Tips: You can buy green mangoes in independent fruit stores. Use a peeler with a julienne blade, to make the prep time easier.
