How to make BBQ Butterflied Chicken and Potatoes
Method
- Preheat barbecue to medium heat. Using kitchen scissors or a sharp knife, cut along each side of the chicken backbone. Remove and discard backbone. Turn the chicken breast side up and press down firmly on the breastbone to flatten.
- Rub the chicken with 2 teaspoons of oil and season with salt and black pepper. Cook on barbecue for 35-40 minutes with the lid down or until the chicken is cooked. Set aside to rest for 10-15 minutes.
- Wash, dry and slice the potatoes into 1cm slices. Brush with oil.
- While the chicken is resting, cook the potatoes on the barbecue or in a grill pan, turning once, for 10 minutes or until cooked.
- If adding the sides, mash the avocado in a bowl with the juice of 2 wedges of lemon. Add tomato pesto into small serving bowl.
- Serve the chicken with the lemon wedges and potato.
- Accompany with the wellness salad, pesto and avocado.
Tip: You can also cook the butterflied chicken in the oven in a baking pan at 200°C (180°C fan-forced) for 35-40 minutes or until cooked.
