How to make BBQ Butterflied Chicken and Potatoes

Method

  1. Preheat barbecue to medium heat. Using kitchen scissors or a sharp knife, cut along each side of the chicken backbone. Remove and discard backbone. Turn the chicken breast side up and press down firmly on the breastbone to flatten.
  2. Rub the chicken with 2 teaspoons of oil and season with salt and black pepper. Cook on barbecue for 35-40 minutes with the lid down or until the chicken is cooked. Set aside to rest for 10-15 minutes.
  3. Wash, dry and slice the potatoes into 1cm slices. Brush with oil.
  4. While the chicken is resting, cook the potatoes on the barbecue or in a grill pan, turning once, for 10 minutes or until cooked.
  5. If adding the sides, mash the avocado in a bowl with the juice of 2 wedges of lemon. Add tomato pesto into small serving bowl.
  6. Serve the chicken with the lemon wedges and potato.
  7. Accompany with the wellness salad, pesto and avocado.

Tip: You can also cook the butterflied chicken in the oven in a baking pan at 200°C (180°C fan-forced) for 35-40 minutes or until cooked.
