How to Make Beef Ravioli and Vegetable Sauce


  1. Heat the oil a medium-sized pan on medium heat. Add the onion and cook for 5 minutes, or until softened. Add the carrot, zucchini and garlic and cook for 3 minutes.
  2. Drain ravioli and serve with sauce. Top with a garnish of basil leaves.

  3. While pasta is cooking, toss together the lettuce, apple and cucumber into a salad bowl. Drizzle with extra olive oil and vinegar to serve.

  4. While water is coming to the boil, immerse a stick blender into the sauce and blend until smooth. If you find this sauce too thick, add a little water to thin, if necessary.

  5. In the meantime, bring a large saucepan of lightly salted water to the boil. Add the ravioli and cook for 4-5 minutes or until tender.

  6. Add the tomato passata, vinegar and sugar and bring to the boil. Reduce the heat, cover and simmer for 15 minutes. Remove from heat and let stand to cool slightly.

Optional: Serve with grated parmesan cheese.
