How to make Burgers with Avocado and Home-made Parmesan Chips

Method

  1. Preheat the oven to 220°C (200°C fan-forced). Line a baking tray with baking paper. Toss the potato chips with 2 tablespoons of oil and place in a single layer on the prepared tray.
  2. Bake for 35-40 minutes or until golden and crisp. Sprinkle with the parmesan cheese and cook for a further 5 minutes or until the cheese has melted.
  3. Meanwhile, cut the onion into quarters. Grate one of the quarters and place in a mixing bowl and set aside. Thinly slice the remaining onion. Heat the remaining oil in a non-stick frying pan and add the sliced onion and capsicum. Cook over medium heat for 5-6 minutes or until golden and soft. Remove from pan and keep warm.
  4. Meanwhile, using your hands, combine grated onion, mince and dried oregano. Form into 4 burger patties.
  5. Reheat the frying pan and add the streaky bacon. Cook for 5 minutes or until crisp. Place on paper towel and keep warm. Wipe pan clean with paper towel.
  6. Reheat the pan. Add the burgers and cook over a medium heat for 3-4 minutes each side or until cooked through. Press down with a spatula to ensure patty is in full contact with the pan.
  7. While burgers are cooking, mash the avocado and vinegar together and place in a small serving bowl. Combine the shredded iceberg lettuce and kaleslaw salad in a bowl.
  8. Serve the burgers with toasted buns, salad, capsicum and onion, avocado and bacon. Let everyone assemble their own burger.
  9. Accompany with the parmesan chips.
