How to make Cauliflower, Spinach and Pea Tikka Masala
Method
- To make the buttered cashews, melt the butter in a small pan over a medium heat. Add the cashews and cook for 4 minutes, stirring often until lightly browned. Season with salt and set aside.
- For the curry, place the oil in a heavy-based pan over a medium heat. Add the onion and ginger and cook for 3 minutes or until softened. Add the curry paste and cauliflower and stir for 1 or 2 minutes, until fragrant.
- Add tomatoes and ¾ cup of water, cover and cook for 15 minutes or until cauliflower is tender. Stir in the spinach and peas and cook for another minute. Stir in the cream.
- Place into a serving bowl and scatter the buttered cashews and coriander on top and serve with grilled naan.
Tip: Try adding other vegetables such as pumpkin or sweet potato.
