How to make Cauliflower, Spinach and Pea Tikka Masala

Method

  1. To make the buttered cashews, melt the butter in a small pan over a medium heat. Add the cashews and cook for 4 minutes, stirring often until lightly browned. Season with salt and set aside.
  2. For the curry, place the oil in a heavy-based pan over a medium heat. Add the onion and ginger and cook for 3 minutes or until softened. Add the curry paste and cauliflower and stir for 1 or 2 minutes, until fragrant.
  3. Add tomatoes and ¾ cup of water, cover and cook for 15 minutes or until cauliflower is tender. Stir in the spinach and peas and cook for another minute. Stir in the cream.
  4. Place into a serving bowl and scatter the buttered cashews and coriander on top and serve with grilled naan.

Tip: Try adding other vegetables such as pumpkin or sweet potato.
