How to Make Chicken Burritos with Apple and Corn Salsa

Method

  1. Preheat the oven to 200°C (180°C fan-forced). Line a baking tray with foil and baking paper. Place chicken on the tray and sprinkle with the burrito seasoning, tossing to coat. 
  2. Cook for 20-25 minutes or until cooked and golden, turning halfway through. Leave to rest for 10 minutes then thinly slice.
  3. Heat a medium-sized frying pan over high heat. Rinse and drain the corn kernels and add to the pan. Cook for 3-4 minutes stirring, or until slightly charred. Place in a mixing bowl to cool.
  4. Once corn has cooled, add the shredded cabbage, kale and apple to the bowl. Drizzle with olive oil and vinegar and season with salt and pepper. Mix well.
  5. Make the burritos: Chargrill the tortillas and spread with aioli. Top with the salsa, sliced chicken and avocado. Careful not to overstuff, and wrap.
  6. Serve with the burrito sauce on the side, apple and corn salsa and garnish with lime wedges.
