How to make Chicken Caesar Salad Lettuce Cups

Method

  1. Preheat oven to 200°C (180°C fan-forced). Toss the bread cubes in 2 tablespoons of olive oil. Place on a baking tray and bake in oven for 10 minutes or until crisp and golden. Reserve.
  2. Heat remaining oil in a non-stick pan over medium heat. Add the chicken and cook for 3-4 minutes on each side or until cooked through. Place on a plate and rest for 5 minutes before slicing into bite-sized pieces.
  3. In the same pan, cook the bacon for 3-4 minutes or until golden and crispy. Remove from pan and place on kitchen towel to absorb any excess fat.
  4. Place 4 large lettuce leaves on a serving plate. Tear remaining lettuce into bite-sized pieces and combine with apple, cucumber and sliced chicken.
  5. Combine mayonnaise with the vinegar in a small bowl and drizzle over the salad.
  6. Sprinkle salad with the reserved croutons and bacon. Serve immediately.

Option: You can also add a few anchovy fillets to the mixture.
