How to make Curried Yaki Udon with Prawns and Leek

Method

  1. Wash capsicum and remove seeds and pith. Finely slice.
  2. Place a wok or large frying pan over a high heat and add the oil. Add the prawns and cook for 1 minute. Add the leek, ginger and curry powder and stir fry until fragrant.
  3. Add capsicum, carrot,  snow peas and cabbage and stir fry until slightly softened. Add the noodles, stir through and season to taste with soy sauce. Set aside.
  4. In a heatproof bowl, soften noodles in hot water and drain. Add cooked vegetables and gently mix through.
  5. In a frying pan over medium to high heat, fry the eggs in oil until cooked to your liking.
  6. Transfer the noodles and vegetables into 2 bowls and top each with a fried egg. Scatter with the shallots and sesame seeds. Serve immediately.

Tip: Make this vegetarian by substituting prawns with cooked tofu cubes.

Optional: Try thinly sliced chicken or beef instead of, or along with the prawns.
