How to Make Gai Yang Chicken


  1. Trim the chicken thighs, rinse pat dry. To make gai yang: combine garlic, ginger, lemongrass, fish sauce and brown sugar in a large mixing bowl. Season with salt and black pepper. Add the chicken thighs and turn to coat with the mixture. Marinate in fridge for 1-2 hours or overnight.
  2. Preheat a BBQ or char-grill to high heat. Grilll chicken, turning regularly, for 25 minutes or until charred and cooked through. Cut into large pieces and keep warm.
  3. While chicken is cooking, make the dipping sauce: combine chilli, garlic, vinegar, sugar and ⅓ cup water in a small saucepan. Bring to the boil and cook over high heat for 15 minutes or until sauce is syrupy. Cool and pour into dipping bowls. Sprinkle with coriander, to serve.
