Grilled Chicken with Cous Cous Recipe

How to make Grilled Chicken with Cous Cous


  1. Mix olive oil, lemon juice, garlic, parsley, salt and pepper in a bowl. Add chicken thighs and coat well. Place in fridge for 15 minutes for flavours to develop.
  2. Make the cous cous: Warm chicken stock. Place cous cous in a bowl and pour over warmed chicken stock and cover. Stand for 2 minutes.
  3. Remove cover and fluff with a fork. Drizzle over lemon oil, salt, pepper and parsley. Set aside.
  4. Take chicken out of the fridge. Heat grill pan to medium-high on stove. Add chicken. Cook each side for 5-6 minutes, or until cooked through.
  5. Remove chicken from pan. Add lemon slices and cook for 2-3 minutes each side.
  6. Mix cous cous and place on serving plate. Top with chicken and garnish with lemon slices.
