How to make Honey Pork and Nectarine Skewers
Method
- Add olive oil, lemon juice, salt and pepper to a bowl and mix until combined and the oil is emulsified.
- Cut the pork into 3cm cubes and add to bowl. Toss to completely coat the pork pieces.
- Cut the nectarines into halves. Remove stones and then slice fruit into wedges. Thread pork and nectarine wedges on 8 metal or wooden skewers.
- Preheat BBQ or char-grill. Cook for 10-12 minutes, turning occasionally or until the pork is cooked.
- For the last minute of cooking, brush with the honey.
- Place skewers onto a serving plate, sprinkle with chopped chives and serve immediately.
