How to make Minestrone Soup with Pasta


  1. Heat oil in a large soup pot over medium-high heat. Add the onion and garlic and cook for 3 minutes or until the onion becomes translucent.
  2. Add carrot, celery and zucchini and cook, stirring regularly, for 5 minutes or until the vegetables are soft.
  3. Stir in chicken stock, diced tomatoes, tomato paste and herbs and bring to a boil.
  4. Add pasta, beans and kale and simmer for 20 minutes uncovered or until pasta is al dente.
  5. Remove the pot from the heat and remove the bay leaf. Stir in the lemon juice and season to taste.
  6. Top with parmesan cheese. Garnish with fresh parsley leaves
  7.  Serve with crunchy sourdough bread.
