How to Make Peach Tofu Chilli and Lime Skewers
Method
- Cut the tofu and peaches into 2.5cm cubes and set aside.
- Combine chilli powder, garlic powder, lime zest and salt in a small bowl. Set aside.
- Combine sweet chilli sauce and soy sauce in another bowl. Set aside.
- Remove pith and seeds from capsicum. Cut onion and capsicum into 2.5cm squares.
- Thread tofu, peaches, onion and capsicum onto wooden or metal skewers and brush with olive oil. Sprinkle with the chilli powder mixture.
- Preheat BBQ or char-grill. Cook the skewers over medium heat for 8-10 minutes, turning occasionally or until lightly charred.
- Brush with the sweet chilli sauce mixture and serve with lime wedges.
