How to Make Peach Tofu Chilli and Lime Skewers

Method

  1. Cut the tofu and peaches into 2.5cm cubes and set aside.
  2. Combine chilli powder, garlic powder, lime zest and salt in a small bowl. Set aside.
  3. Combine sweet chilli sauce and soy sauce in another bowl. Set aside.
  4. Remove pith and seeds from capsicum. Cut onion and capsicum into 2.5cm squares.
  5. Thread tofu, peaches, onion and capsicum onto wooden or metal skewers and brush with olive oil. Sprinkle with the chilli powder mixture.
  6. Preheat BBQ or char-grill. Cook the skewers over medium heat for 8-10 minutes, turning occasionally or until lightly charred.
  7. Brush with the sweet chilli sauce mixture and serve with lime wedges.
