How to Make Pecan Panko Crusted Salmon
Method
- Preheat the oven to 190°C (or 170° fan-forced). Line a baking tray with baking paper.
- For the panko crumb, combine panko, pecans, parsley, mustard, lemon zest and chilli flakes into a small bowl. Season well with salt and pepper. Add the olive oil and mix until combined.
- Place the salmon, skin-side down onto a baking tray. Press the panko mixture onto the top of each salmon fillet, gently compacting it to completely cover the top.
- Bake for 12 minutes or until salmon is just cooked and the crumbs are golden. Remove from oven and prepare to serve.
- Serve with a dressed green salad and a few lemon wedges.
Tip: Try experimenting with different nuts, such as almonds or walnuts.
