How to Make Peruvian Chicken with Green Sauce


  1. Combine garlic, soy sauce, lime zest, juice, oil, cumin, paprika and oregano in a large mixing bowl. Season with salt and black pepper and combine.
  2. Add the chicken and coat with mixture. Cover and place in fridge for 4-6 hours (or overnight).  
  3. Preheat BBQ or char-grill. Cook chicken over medium heat for 15-20 minutes, turning occasionally, or until cooked through and lightly charred. Place on a warm plate, lightly cover with foil, and rest the meat for 5-10 minutes before serving.
  4. For the green sauce: place spring onion, coriander, chilli, garlic, mayonnaise, lemon juice and oil into a food processor. Blend until smooth. Season to taste with salt and pepper.
  5. Serve chicken with green sauce and lime wedges. Garnish sauce with sliced chilli.
