How to Make Pork Loin Roast with Sesame Miso

Method

  1. Preheat oven 240°C  (220°C fan forced ovens).Prepare a baking tray for the pork.
  2. Remove pork from packaging, pat dry with paper towel. Rub 50ml of vegetable oil over the pork and rub with salt.
  3. Place on a tray and cook for 35 minutes to form the crackling. (Cook for 30-40 mins per kg).
  4. Turn the oven down to 200°C (180°C  fan forced ovens)  and cook for a further 35-40 mins. Internal temperature to show 70 degrees and above. Rest for 20 minutes.
  5. Toast the sesame seeds in a dry frypan for 6-8 mins, moving constantly so as not to burn.
  6. Place the miso paste and sugar into a bowl and whisk in the vinegar. Whisk in the oils with 1 tablespoon of water. Stir in the toasted sesame seeds.
  7. Slice pork, present on plate or platter, pour sauce over and serve.

Tip: In addition to being a great dipping sauce, you can also use it as a coleslaw dressing or to pour over roasted vegetables.

Optional: You can substitute the sugar with honey or maple syrup. You can also use soy sauce as an alternative to miso paste (although much thinner consistency but similar umami flavour).
