How to Make Pork Scotch Fillet with Sweet Gorgonzola Butter

Method

  1. Leave butter out of fridge, for approximately 1 hour, to soften.
  2. In the meantime, peel and grate apple. In a small pan, heat oil on low-medium heat. Add lemon zest and apple and cook, to soften through.
  3. Pick rosemary and parsley leaves, chop finely.
  4. Using a handheld mixer, whip the butter and milk until creamy white. Then fold through the cheese, oil, parsley and rosemary. Season with pepper to taste.
  5. Using greaseproof paper, add a piece of plastic wrap on top. Roughly form the gorgonzola butter into a log shape and place onto plastic wrap. Use this to lightly form your log. Then roll up gorgonzola butter in the greaseproof paper and twist each end. Place in the fridge for 4 hours, or overnight.
  6. In a pan on medium heat, cook scotch fillets for 4 minutes one side, then turn over and cook for 3 minutes. 
  7. While steaks are cooking, slice the gorgonzola butter into medallions. Add butter to steaks, while you allow steaks to rest on a plate before serving.
