How to make Roast Lamb with Rosemary Garlic Glaze

Method

  1. Preheat the oven to 200°C (or 180°C fan-forced). Put the leg of lamb into a roasting dish just big enough to hold it.
  2. Cut the garlic bulbs in half and stuff around the lamb along with the rosemary. Pour over the water.
  3. Cook uncovered for 30 minutes, then turn the heat down to 160°C (or 140°C fan-forced). Cover loosely with foil and cook for a further 3 hours.
  4. To make the glaze: mix together finely chopped rosemary leaves, minced garlic, honey and lemon juice and zest. Turn the heat back to 200°C (or 180°C fan-forced), take off the foil and brush with the glaze.
  5. Cook for another 20 minutes, basting every 5 minutes.
  6. Great served with steamed vegetables and new potatoes.
