How to make Roasted Nectarine and Honey Pizza

Method

  1. Make the pizza dough first. Stir the yeast and sugar into a bowl with the warm water and leave for 5 minutes or until frothy.
  2. Place the flour and salt into the bowl of a stand mixer with the dough hook attached. Pour in the frothy yeast and oil and mix for 3-5 minutes or until smooth.
  3. Place into a large, oiled bowl. Cover with cling film and set aside in a warm place to prove for an hour or untli doubled in size.
  4. Lightly sprinkle the work surface with flour and turn out the risen dough. Knead until smooth. Lightly pile and cover in cling wrap while you prepare your fillings.
  5. Preheat oven to 250°C (230°C fan-forced).
  6. With a fork, mix the ricotta with 1 tbsp honey gently, to combine.
  7. Divide the dough into 3 and lightly dust the work surface with flour. Roll or hand-stretch the dough into 3 pizza bases and place onto pizza trays or baking sheets.
  8. Smear the sweet ricotta over the pizza bases, leaving a 1cm border.
  9. Cut the nectarines into wedges and scatter them over the ricotta. Sprinkle with half of the thyme (if using). Drizzle the remaining tablespoons of honey on top and bake for 10 minutes or until the base is golden.
  10. Top with remaining thyme (if using) and almonds. Drizzle with more honey and serve straight away.

Tip: Make sure your oven is very hot. When making pizza dough, make sure the warm water isn’t too hot, as this will inhibit or kill the yeast.

Optional: You can swap out nectarines for other stone fruits such as peaches, apricots, plums or even pitted cherries.
