How to make Salmon with Spiced Mango, Ginger and Coriander

Method

  1. Add mango to a blender with lemon juice. mustard, olive oil, tomato paste, maple syrup and chilli. Pulse until smooth. (If using frozen mango, fully defrost first.)
  2. Heat frypan on medium heat and cook for 5-6 minutes. Remove from heat and cool. Taste and season with salt and pepper as required. 
  3. Spread marinade sauce mixture over salmon pieces.
  4. Heat frypan and cook salmon fillets – skin side down – for 4 minutes, until skin is crisp and salmon is cooked halfway up fillet.
  5. Turn fillets over and cook for a further 3-4 minutes. Remove from heat and rest 2 for minutes.
  6. Drizzle with more of the marinade and garnish with chopped, fresh coriander.

Tip: This marinade works particularly well with fish and prawns. It can be used as a marinade or as a flavouring for a mayonnaise-based dipping sauce. If using it this way, simply place the ingredients into a small food processor and blitz until smooth.
