How to make Sausage and Zucchini Skewers with Rice Salad

Method

  1. Wash the vegetables. Slice the zucchini into 2cm slices. Cut half of the capsicum into 3cm squares. Finely dice the remaining half and set aside.
  2. Dice the onion into 3cm squares.
  3. Cut each sausage into 3 even pieces. Thread sausage pieces, capsicum, zucchini and onion onto metal skewers, to make your kebabs.
  4. Cook the skewers on the barbecue for 10-12 minutes, turning once, or until cooked.
  5. While the skewers are cooking, combine the cooked brown rice, corn, black beans, diced capsicum, chopped tomato and rocket leaves. Drizzle with the oil and vinegar.Toss to combine.
  6. Place cos lettuce leaves in a bowl. Serve the skewers with the rice salad and lettuce.
  7. Serve with lime wedges (optional).

Tip: You can substitute sausages with pork sausages or any kind you like. Or swap out sausages for chicken or beef of your choice.
