How to make Spiced Lamb Kebabs with Grilled Cauliflower

Method

  1. Make the spice mix: Grind cloves with a mortar and pestle. Add ground cloves along with all the other spices in an airtight container. Stir through and set aside.
  2. Trim lamb and cut into 3cm cubes. Toss lamb through spices then place 6-7 pieces on a skewer. Continue with the rest of the lamb. Place in refrigerator for 10-15 minutes.
  3. Make the lemon dressing: In a bowl, add zest and juice of lemon, mustard, garlic and sugar. Whisk in olive oil until emulsified.
  4. Cut out the stem and leaves of the cauliflower. Break off the florets then cut the florets into thick slices. Heat a grill plate to a medium-high heat, add 2 teaspoons of vegetable oil then char the flat side down for 3-4 minutes. Turnover and further char for 3-4 minutes. Let cool for 15-20 minutes.
  5. Slice the mango cheeks, peel and cut into cubes then grill them on a high heat for 2-3 minutes, for colour and a charred flavour.
  6. Peel red onion and cut into wedges. Grill on medium-high heat for 4-5 minutes.
  7. Roughly chop coriander leaves.
  8. In a large bowl, add onion, coriander, cauliflower and mango. Add lemon dressing and toss through.
  9. Bring a grill plate or skillet to a medium-high heat, lightly oil then cook each skewer on all sides for at least 3-4 minutes.
  10. Serve with – or on top of – a salad. Garnish with coriander leaves.
