How to make Spicy Mango and Lime Grilled Chicken

Method

  1. Preheat oven to 190°C (170°C fan-forced).
  2. Make the salsa first. Mix together papaya, avocado, red onion, chilli and season well then set aside.
  3. Preheat a chargrill or barbecue to high. Place the chicken skin-side down and cook until nicely coloured on the outside. Turn over and repeat on the other side.
  4. Transfer to a baking sheet and bake for 15 minutes per 500g or until completely cooked through. Set aside to rest for 10 minutes.
  5. Meanwhile, cut the cos lettuce into quarters lengthways, keeping the base attached so the leaves stay together. Wash and gently pat dry. Brush with oil and season well. Place on the chargrill or barbecue and cook on all sides until tender and lightly charred.
  6. Cut the chicken into pieces and serve with the grilled cos, salsa and lime wedges.

Tip: For a mild salsa, omit the green chilli.

Optional: You can cook the chicken on the grill or barbecue for the whole time. Simply reduce the heat to medium-low after colouring the outside and cook for approximately 15 minutes per 500g.
