How to make Sticky Chilli Peach Drumsticks

Method

  1. Preheat oven to 200°C (180°C fan-forced). Prepare a baking tray with aluminium foil and baking paper.
  2. Sprinkle the drumsticks with paprika, salt and pepper. Place on the baking tray and bake for 40 minutes.
  3. Meanwhile, remove skin from 2 peaches. Chop the flesh and place in food processor. Add vinegar, soy, chilli and garlic sauces and sugar. Blend until smooth.
  4. Remove drumsticks from oven. Pour peach mixture over the drumsticks and cook for a further 10 minutes or until the chicken is sticky golden and cooked through. Leave to rest for 5 minutes and place on a platter.
  5. Meanwhile, cut the remaining peaches into wedges. Heat a non-stick frying pan over medium heat. Lightly spray the wedges with olive oil and cook for 1-2 minutes on one side or until caramelised.
  6. Place peach wedges amongst the drumsticks. Garnish with coriander leaves. Serve immediately.
