How to make Sweet and Spicy Salmon Skewers
Method
- For the sauce, in a pan bring to boil all ingredients except the corn flour and 3 tablespoons of water. Simmer for approximately 3-4 minutes until the sugar has dissolved.
- Make a paste with the corn flour and water. Add to the sauce and whisk to thicken slightly. Turn off heat and set aside.
- Lightly toast the sesame seeds add to dry frypan on medium heat. Move around the pan to toast, until lightly golden. Set aside.
- For the salmon skewers, in a non-stick pan heat oil to medium heat. While heating up, cut off salmon skin carefully and cut salmon into 3cm cubes.
- Place on skewers and then cook in pan 2-3 minutes each side until slightly golden on edges.
- Once cooked, serve on a plate, pour over sauce and garnish with sesame seeds, lemon and coriander sprigs.
