How to make Three Greens Soup with Toasty Brie


  1. Heat oil and butter in a large saucepan over medium heat. Cook onions, stirring, for 5 minutes or until soft but not golden.
  2. Add potatoes, water and stock cubes to the pan. Bring to the boil, reduce heat, cover and simmer for 15 minutes or until the potatoes are tender.
  3. Add the spinach and rocket mix and peas and cook uncovered for 5 minutes. Remove from heat and set aside for 5 minutes to cool slightly.
  4. Blend soup using a stick blender or food processor until very smooth. Season to taste with sea salt and black pepper.
  5. Serve in warm bowls drizzled with cream. Garnish with fresh thyme leaves (optional).
  6. For the brie croutons, heat grill to high. Cut each slice of bread in half. Slice the brie. Place bread on a baking tray and grill until browned on one side.Turn bread over and top with slices of brie. Grill until melted. Sprinkle with fresh thyme leaves, if using, then serve with the soup.
