How to make Turmeric Fish Curry

Method

  1. Cook green beans (boil or steam) and set aside.
  2. Place the coconut oil into a frying pan set over a medium heat. Add the onion, garlic, ginger (and curry leaves, if using) and cook for 3 minutes. Add the turmeric, curry powder and cumin and stir until fragrant. Add the coconut milk and bring to a simmer.
  3. Add the fish, turn the heat to low and place on the lid. Cook for 5 minutes or until fish is just cooked through. Gently stir in the cooked beans until warmed through.
  4. Season well with salt and lime juice. Serve with rice, chilli, lime wedges and crispy curry leaves (if using).

Tip: You can use canola or sunflower oil if you don’t have coconut oil.

Optional: You can substitute basa fillets for salmon fillets.
