How to make Turmeric Fish Curry
Method
- Cook green beans (boil or steam) and set aside.
- Place the coconut oil into a frying pan set over a medium heat. Add the onion, garlic, ginger (and curry leaves, if using) and cook for 3 minutes. Add the turmeric, curry powder and cumin and stir until fragrant. Add the coconut milk and bring to a simmer.
- Add the fish, turn the heat to low and place on the lid. Cook for 5 minutes or until fish is just cooked through. Gently stir in the cooked beans until warmed through.
- Season well with salt and lime juice. Serve with rice, chilli, lime wedges and crispy curry leaves (if using).
Tip: You can use canola or sunflower oil if you don’t have coconut oil.
Optional: You can substitute basa fillets for salmon fillets.
