How to make Air Fryer Veggie and Ricotta Fritters

Ingredients
- 2 cups Market Fare frozen mixed vegetables, thawed and drained
- ½ cup Westacre Dairy smooth ricotta
- 1 Lodge Farms egg
- ¼ cup White Mill gluten free plain flour
- ½ tsp Stonemill garlic powder
- ¼ tsp Stonemill salt
- Stonemill pepper, to taste
- The Olive Tree extra virgin olive oil spray
Method
- Preheat air fryer to 190°C.
- In a bowl, combine the mixed vegetables, ricotta, egg, gluten free flour, garlic powder, salt and pepper to taste.
- Mix until a thick batter forms. If too wet, add another tablespoon of flour.
- Shape mixture into fritters and place in the air fryer basket, in a single layer (use approximately 2 tablespoons per fritter).
- Spray lightly with olive oil.
- Air fry for 10–12 minutes, flipping halfway, until golden and set.
- Serve warm.
Tip
- Drain the thawed mixed vegetables well — removing excess water ensures crispier fritters.
- Consider these add-ins for an extra flavour boost - Herbs, spring onion, or a sprinkle of parmesan.
