Chicken and Grape Salad
How to make Chicken and Grape Salad
Prep Time: 10 minutes | Cook Time: 15 minutes | Serves: 2
Ingredients
- 2 chicken breast fillets
- 2 tbsp The Olive Tree olive oil
- 150g The Fresh Salad Co salad leaf mix
- 1 cup red seedless grapes
- 110g Emporium Selection goat’s cheese
- 3 tbsp The Olive Tree extra virgin olive oil
- 1 tbsp Remano balsamic vinegar
- Salt and pepper
Method
- Season the chicken breasts with salt and pepper, coating them in 2 tablespoons of olive oil.
- Pan-fry or bake the chicken until cooked through. Slice thinly and set aside to cool.
- In a small bowl, whisk together the olive oil and balsamic vinegar. Season with salt and pepper, to taste.
- Halve the grapes and add them to the salad leaves. Add the sliced chicken.
- Pour the dressing over the salad and gently toss to coat.
- Crumble the goat’s cheese over the top.
Optional
Add toasted almonds and walnuts or a drizzle of honey for sweetness.
