Chicken and Grape Salad

How to make Chicken and Grape Salad

Prep Time: 10 minutes        |        Cook Time: 15 minutes        |        Serves: 2

Ingredients

  • 2 chicken breast fillets
  • 2 tbsp The Olive Tree olive oil
  • 150g The Fresh Salad Co salad leaf mix
  • 1 cup red seedless grapes
  • 110g Emporium Selection goat’s cheese
  • 3 tbsp The Olive Tree extra virgin olive oil
  • 1 tbsp Remano balsamic vinegar
  • Salt and pepper

Method

  1. Season the chicken breasts with salt and pepper, coating them in 2 tablespoons of olive oil.
  2. Pan-fry or bake the chicken until cooked through. Slice thinly and set aside to cool.
  3. In a small bowl, whisk together the olive oil and balsamic vinegar. Season with salt and pepper, to taste.
  4. Halve the grapes and add them to the salad leaves. Add the sliced chicken.
  5. Pour the dressing over the salad and gently toss to coat.
  6. Crumble the goat’s cheese over the top.

Optional

Add toasted almonds and walnuts or a drizzle of honey for sweetness.
