How to make Baby Cos Salad


  1. Wash the baby cos lettuce and cut into halves. Cover and set aside.
  2. Into a food processor, add blue cheese, yogurt, olive oil, vinegar, dijon mustard and parsley in a food processor. Blend until smooth. Place dressing in fridge until ready to serve.
  3. Heat a large, non-stick frying pan over medium heat. Cut bacon into small pieces and add to pan. Cook 5 minutes or until golden and crisp. Transfer to a plate lined with kitchen paper towel to drain and cool.
  4. When ready to serve salad, remove blue cheese dressing from fridge, 10 minutes before serving. Place lettuce halves on a serving platter. Drizzle with the dressing and sprinkle with bacon.
  5. Garnish with parsley and serve immediately.
