How to make Cheesy Cauliflower and Broccoli Bites

Method

  1. Preheat oven to 180°C (or 160°C fan-forced) . Place the cauliflower and brocolli into a large mixing bowl and add the oil, garlic, half of the parmesan cheese and chilli flakes (if using). Season well and toss to coat.
  2. Place in a single layer on a large baking tray and cook for 15 minutes. Remove from the oven, turn the cauliflower over and sprinkle over the remaining parmesan. Bake for a further 15 minutes or until golden brown and tender.
  3. Meanwhile, make the yogurt and chive dip by adding yogurt, chives, garlic and lemon juice to a small bowl. Mix the ingredients together and season to taste.
  4. Serve the warm vegetables with the yogurt dip.

Tip: Save time on making the dip by using any ALDI dips you have at home. Hommus or tzatziki work particularly well.

Optional: For an extra crispy crunch, add a few tablespoons of panko crumbs to the coating mix.
