How to make Crispy Avocado Wedges
Method
- Make the dipping sauce first. Add mayonnaise, sour cream, basil, parsley and lemon zest to a small bowl and stir well to combine. Then refrigerate while you prepare the avocados.
- Heat the olive oil in a large frying pan on medium heat.
- Place the avocado quarters on a tray, lined with baking paper. Pour the beaten eggs into a shallow bowl and place the panko bread crumbs in another shallow bowl.
- Dip avocado quarters in the egg, then coat in the bread crumbs. Place them back on the lined trays.
- Fry the breaded avocados in the oil, flipping every 20-30 seconds until golden brown all over.
- While they are frying, line the baking tray with paper towel. Place the cooked avocados on the paper towel to drain and cool slightly.
- Place the warm avocados on a serving tray, spinkle with salt and serve immediately with the dipping sauce.
Tip: Ensure oil is not too hot, so you can slowly and gently brown the avocado wedges. For a healthier option, you can bake instead of fry. Skip steps 2, 5 and 6. Once the avocados are breaded and on the trays, spray them with a little olive oil and bake in a preheated oven at 200°C (180°C fan-forced) for 10-12 minutes.
Optional: You can substitute or add other chopped herbs, like coriander or chives, in the dipping sauce.
