How to Make a DIY Salmon Tostada Board

Method

  1. For the tostadas, use a 10cm round cutter to create 4 rounds per wrap, making 16 in total.
  2. Place 1cm oil into a frying pan over a medium-high heat and fry the rounds on both sides until golden and crispy. Set aside on paper towel.
  3. Coat the salmon with the fajita seasoning and pan fry in a little oil over medium-high heat until browned on all sides and cooked to your liking. Set aside to rest.
  4. Purée or mash the avocado with half of the lime juice and add salt to taste.
  5. Make the salsa by mixing the tomato, onion, coriander and chilli (if using) together with the remaining lime juice. Season with salt.
  6. Flake the salmon into large pieces, discarding the skin. Place the crispy tostadas onto a platter, spread with the avocado and top with the shredded cabbage. Place the salmon and salsa on top. Serve with coriander leaves and lime wedges.

Tip: These can be assembled and served, or alternatively served as a DIY platter, with everyone making their own.

Optional: You can swap out the salmon for some pan-fried lamb leg steaks.
