How to make Green Bean Summer Salad with Herb Dressing

Method

  1. Bring a large pot of salted water to the boil and add the green beans. Boil beans for 5-7 minutes until tender but still somewhat firm. Lower the heat and remove the beans from the water and rinse them in ice cold water, then set aside.
  2. Increase the heat again and use the same pot of water to boil the corn kernels for 5 minutes. Drain and set aside to cool.  
  3. Make the dressing by adding the herbs, lemon juice, vinegar, olive oil, mustard, minced garlic and pinch of salt into a jar. With lid on, shake jar to combine then set aside.
  4. In a large bowl, combine corn, chick peas, tomatoes and spring onion. Add the blanched green beans, then pour the dressing on top. Toss together to coat. Season to taste with salt and pepper.
