Grilled Watermelon and Corn Skewers

How to make Grilled Watermelon and Corn Skewers

Method

  1. Cook microwaveable corn to packet directions. Once cooked, and slightly cooled, cut each corn cob into 3 pieces.
  2. Turn BBQ or grill plate on to medium heat. Skewer fruit and vegetables on metal skewers (corn, capsicum, watermelon chunk, corn again, etc).
  3. Brush each of the skewers with olive oil and season with salt and pepper.
  4. Cook for approximately 5 minutes, each side.
  5. Meanwhile, toast the pine nuts. Heat frypan and, once hot, turn down to medium-low. Add pine nuts in a single layer. Move around pan, turning occasionally until golden brown and nutty smelling.
  6. When skewers are cooked, add to serving platter. Add torn basil leaves, season then add pine nuts. Serve with extra basil and pine nuts.  
  7. Serve immediately.
