How to Make Mango Sriracha Chutney

Method

  1. Peel and dice mango into 1cm pieces. Set aside ½ cup of mango.
  2. Combine ginger, fresh chilli, corander, garlic, vinegar, sugar, cinnamon, chilli flakes, salt, sriracha and mango in a medium-sized saucepan. Bring to a boil, stirring frequently. Reduce to a steady simmer and cook for 20 minutes.
  3. Add the reserved ½ cup of mango and continue to cook for another 10 minutes or until mixture thickens and starts to become syrupy. Stir in the fresh lime juice.
  4. Ladle chutney into a clean jar and allow to cool, then keep refrigerated.

Note: Chutney will thicken as it cools.

Tip: Chutney will keep stored in the refrigerator for several weeks.
