How to make Parmesan Pumpkin Bites

Method

  1. Preheat the oven to 200°C (or 180°C fan-forced).
  2. Peel the butternut pumpkin and cut in half, then remove and discard any seeds.
  3. Chop the butternut flesh into large chunks. Put onto a baking tray, drizzle over the olive oil and bake in the oven for 20 minutes until soft and slightly blackened.
  4. Set aide to cool slightly, then put into a mixing bowl and mash to a smooth pulp.
  5. Add the chilli flakes and paprika. Season with salt and black pepper. Add 45g grated parmesan cheese and mix well.
  6. Sift in the flour and baking powder and mix everything into a soft dough.
  7. Turn out on a lightly floured board and roll the dough into a rectangle, approximately 25cm x 15cm.
  8. Cut into 24 squares, lightly glaze with egg yolk, then sprinkle with the remaining parmesan cheese.
  9. Place onto a greased baking sheet. Bake in the oven for 15 minutes, then serve warm.
