How to Make Quick and Fresh Tomato Sauce

Method

  1. Remove skin from tomatoes and scoop out the seeds. Cut the tomatoes in half and purée in a blender or food processor. 
  2. Heat the tomato purée in a low, wide saucepan over high heat. Add salt, olive oil, tomato paste, garlic and basil leaves. Bring to a boil, add in sugar and season to taste.
  3. Lower heat to a brisk simmer and cook until the sauce is reduced by almost half, stirring occasionally.  A medium-thick sauce will take about 10 to 15 minutes.
  4. Taste and adjust seasoning.

Tip: Add other herbs like chopped oregano for extra flavour.

Note: Fresh tomato sauce will keep up to 5 days in the refrigerator or may be frozen.
