How to Make Scrambled Tomatoes


  1. Heat pan and lightly fry tomato in olive oil for about three minutes.
  2. Add feta and spinach to the pan, and cook for one minute. Add pesto, and toss to combine. Season to taste.
  3. Lightly toast rye bread, then smear each slice with half an avocado. Place scrambled tomatoes on top to finish.
