How to Make Spicy Prawn and Pineapple Salad


  1. Prepare the pineapple: peel and cut into large slices
  2. Slice the cherry and grape tomatoes in half.
  3. Slice avocado flesh into slices.
  4. Make the dressing: Add lime juice and zest, honey and olive oil together and whisk. Season with salt and pepper and whisk again. Set aside.
  5. Preheat a chargrill to high and grill the pineapple for a few minutes on each side or until nicely charred. Chop the charred flesh into cubes, discarding the tough core.
  6. Place the pineapple, prawns, tomato, avocado, chilli and coriander into a large mixing bowl and toss with the dressing.
  7. Season to taste and serve with line slices.
  8. If using chilli flakes, add a sprinkling of dried chilli flakes before serving.

Tip: Try adding a handful of roasted peanuts or cashews.

Optional: Remove the chilli for a mild version. Or add more if you’re feeling brave!
